Thyme Chicken with Lemon and Garlic

Ingredients
1 whole roasting chicken
1 lemon
1/2 bulb of garlic
"I cant believe its not butter" (non-fat spray)
Fresh Thyme
garlic salt
lemon pepper
baby carrots
red potatoes

Method
Clean chicken and remove giblets. Put chicken in roasting pan with enough room around it to put carrots and potatoes. Put as many baby carrots around chicken as you would like. Cut up potatoes in quarters and put around chicken with the carrots. Spray a generous amount of butter spray on chicken and carrots and potatoes to coat.

( Be generous, its fat free!) Cut lemon in quarters and stuff chicken with 3/4 of them. Squeeze 1/4 of it on chicken and veggies. Cut whole garlic bulb in half and stuff it in the chicken. Stuff the fresh thyme in the chicken. And put some sprigs of thyme around chicken on top of veggies.

Sprinkle garlic salt and lemon pepper all over chicken and veggies. Cook in oven at 350 degrees for about an hour and a half, or until chicken is no longer pink.During cooking, baste chicken with juices in pan and tip pan at angle once or twice to allow juices in the chicken to run to pan with veggies.
